1/2 c. Cookies Tangy Mustard or other Cookies BBQ Sauce
1 c. old-fashioned oats
2 tsp. Cookies Flavor Enhancer and All Purpose Seasoning
3/4 c. finely chopped onion
3/4 c. finely chopped celery
1 c. shredded Cheddar cheese
2 lbs. ground beef
16 strips of bacon
In a large bowl, stir together Cookies Tangy Mustard BBQ Sauce, oats, Cookies Flavor Enhancer and mix well. Stir in onion, celery and 1 cup of cheese. Add beef; mix well. Make your 8×8 bacon weave with 16 slices of bacon. Season bacon lightly with Cookies Flavor Enhancer. Press out the meat mixture to the size of your bacon weave creating an even layer all the way across the weave. Roll up your bacon weave with the meat mixture in the center and place seam side down in a large pan or put on foil in your smoker. Smoke at 250-275 degrees until internal temperature of meat is 160 degrees. You can also do this in your oven set at 325-350 degrees till done. It will take 1-2 hours.
*Tip: When making the Bacon Explosion, you can also use 1 lb. sausage & 1 lb. beef or use various meat mixtures of your own choosing. In love with the idea of adding more bacon? Sprinkle a layer of cooked, crumbled bacon on top of the meat layer before rolling into loaf.
