Cowboy Burrito

Cowboy Burrito

INGREDIENTS:

4 lb. pork shoulder roast or boneless rib ends, prepared and shredded (see our Pulled Pork Oven-Style recipe)

1 box of Macaroni & Cheese, prepared

1 can French fried onions

Package of 12″ wheat tortillas

Cookies Original BBQ Sauce

DIRECTIONS:

Prep:

Heat oven to 325 degrees. Prepare Mac and Cheese as directed on package. Ensure pulled pork has been cooked to 165 degrees.

 

Assembly:

Place tortilla down and add 1/2 cup of Mac and Cheese down the center of the tortilla. Place 4-6 oz. of cooked pulled pork on top of Mac and Cheese, spreading to make even. Top with 1 T. fried onions and 1 T. Cookies BBQ sauce. Start at one end and begin rolling the burrito. Roll once, then tuck each side in and continue to roll. Keep the roll tight and uniform. Repeat.

 

Place burritos on sheet pan lined with parchment seam side down. Cover with foil and place another sheet pan on top for weight to “press” burritos. Cook 25-30 minutes, checking bottoms of burritos as not to brown too fast. Cooking slow and low will prevent burrito blow out. Burritos are done once internal temperature reaches 165 degrees.
