Meatball ingredients:
1 lb. ground beef
1 lb. ground pork
1/2 c. chopped onion
1 garlic clove
1 c. Cookies Korean BBQ sauce
1 c. bread crumbs
2 eggs
Glaze ingredients:
1-20 oz. can pineapple tidbits, drained (reserve the juice)
1-6 oz. can pineapple juice
1 T. cornstarch
1/2 c. Cookies Korean BBQ Sauce
Mix meatball ingredients together and form into meatballs (approximately 1 oz. each). Set smoker at 300 degrees and smoke for 50-60 minutes until done (160 degrees internal temp).
Prepare sauce by combining cornstarch and pineapple juice (you will have approximately 1 1/2 cups total) in saucepan and bring to a boil. Boil for one minute, then add the pineapple tidbits and 1/2 cup Cookies Korean BBQ Sauce. Stir well and pour over meatballs. Serve as a meal with rice or serve as an appetizer in a slow cooker on warm.
*This can also be made into a meatloaf. Put meat mixture in standard loaf pan and place in 350 degree oven for 1 hour until done (160 degrees internal temp or warmer).
