1 tablespoon olive oil
1/2 medium onion, chopped
2 teaspoons of minced garlic
1 can of mushrooms, stemmed, caps sliced
1 pound raw medium shrimp, shelled and deveined
1/4 cup of Cookies Wings ‘N’ Things sauce
1/4 cup of low-sodium soy sauce
1/4 cup Vinegar
4 cups of chicken stock
Wash and thaw shrimp.
In a large pot, heat the olive oil. Add the garlic and onion. Cover and cook over moderate heat, stirring a few times, until tender, 5 minutes. Uncover and add shrimp, stir and cook for 10 minutes.
Add the Cookies Wings ‘N’ Things sauce, soy sauce and vinegar. Cook over moderate heat, stirring occasionally, about 7 minutes. Add the chicken stock and and bring to a boil. Simmer over moderate heat for 10 minutes.
